Do we really need multiple [ubuntu]s?
I'll concede that the same maybe shouldn't apply to Windows. Because, as you say. There really *isn't that much difference. But in the case of Ubuntu. It seems to me that things will be less "messy" as a result of "consolidation". But I won't vote against you, or vote you down, if you disagree. :)

@Ramhound As I understood the OP; there are 19 tags/topics for Ubuntu. IMHO there need only be 1. With the requirement that any question regarding Ubuntu must provide their version. I follow the rules. Why shouldn't everyone else. :) This IMHO consolidates all Ubuntu discussion quite nicely. As to Windows. IMHO the same should apply. :)

Merge [EFI] and [UEFI] tags?
Sorry. I guess the OP wasn't clear to me. If the OP, or "tag" is speaking to
EFI/UEFI
as it pertains to the BIOS
boot process. I have no argument against the merger. But given that there is an EFI
slice/partition involved. The whole "topic" seems to include/require this aspect. Lastly, for the record I didn't actually vote against the topic. Just expressing opposition in my comment. :)

I vote no. There is as you mention, a difference. But this difference is not specific just to "old Macs", and further; it also pertains to the partition itself (name). Which may, or may-not be UEFI. Finally, I fail to see any real value in consolidation (merging). Can anyone actually show how it provides better value to users/contributors?
